Jodi was born and raised in Auburn Township, Ohio. Jodi was the daughter of Rick, Debbie Blankenship and sister of Nick Blankenship. Jodi was accepted to Hocking College in the fall of 2004 where she received an associate degree in the Culinary Arts in 2006 and went back to for associate degree in Hotel and Restaurant Management.

Jodi was known by so many for her personality, her smile and the energy she possessed. Jodi enjoyed country line dancing, cooking, cake decorating, scrapbooking. shopping and hanging out with her friends.

Jodi was a member of the Auburn Community Church and attended Cornerstone Youth Ministries. Jodi had the opportunity to go on two mission trips to New York and Canada. She loved to help others.

Jodi's dream in high school was to start her own restaurant and she was going to call it Jodi's Journey's around the world. Unfortunately, Jodi died before her dream could come true. So, the Blankenship Family wishes to carry on her name by awarding a scholaship to  a deserving Auburn Career Center student in the Culinary Arts Field. This was Jodi's passion and she would have loved to have been able to help other people to accomplish all that she did and all that she would have been.

Along with the Blankenship Family, the NorthEast Ohio Kart Club, Netshape Technologies Inc., Auburn Communtiy Church, New Direction Photography and Huntington Bank would like to invite all to attend a karting event in Jodi Blankenship's name, Jodi's Journey Culinary Arts Scholarship Race at Bainbridge Speedway.
